Mom made these tarts as a family treat growing up. They smell wonderful while they are cooking and they melt in your mouth.
1 Pound of Flour
1/2 Pound of Crisco Shortening
1/2 Tsp of Salt
1 level Tsp of Baking Powder
1 Cup of Sugar
2 Beaten Eggs
1 & 1/2 Tsp of Vanilla
5 Tbsp of Raisins cut in half
1/2 Cup of Margarine
Blend the flour, crisco shortening, salt and baking powder until ribby. Then add a little over 1/2 cup of water distributed evenly and let stand for 5 minutes. Blend it into a ball. Roll out the dough out flat and cut into round tart size circles. Place the circles into a muffin tins.
To make the tart filling, in a separate bowl mix the sugar and margarine and set aside. In another bowl mix 2 beaten eggs, vanilla and the raisins. Add the egg/vanilla/raisin mixture to the sugar and margarine tart filling and beat well. Into each tart place a scant Tsp of the tart filling. Bake at 350 degrees for 10 minutes.
